Oh gosh I have a couple blanket videos I think would be perfect for this.  Keep in mind, you can change the yarn brand and color of any of the blankets I recommend here just try to keep the same yarn thickness or size.

Those I think are great options for you to take a peak at.  You can also do a simple Granny Square that you continue to grow as big as you want.
