Hi Karan! WOW! What a great experience that must have been to connect with that crochet group in San Miguel de Allende! I completely understand your struggle with that foundation row and first row. They sure can be pesky and finicky. I have lot of different suggestions for you to try as to help you with this question.
1. If your foundation row seems to often come out smaller than the rest of your project, try working with a crochet hook one to two sizes larger just in your foundation chain then switch back to the hook you want to work with for row 1. This will help give each stitch more room in that chain space. And vise-versa if your foundation is to large.
Have you played with a foundationless stitch before? This has helped many people who struggle with that foundation chain. By working your first row AND your foundation at the same time it provides adequate room for your stitches and everything seems to even out better.
